Billy O’s Chicken Parmesan

I love recipes that use a few, simple ingredients to create hearty flavors. Chicken Parmigiana is one of those recipes.

The origin of the dish is claimed by both the Southern regions of  Italy (Campania and Sicily). Other variations found outside Italy may include chicken, veal, or another type of meat cutlet or vegetable filling.

Chicken Parmesan was popularized among Italian-American immigrants.

Today, Chicken Parmigiana has had its name simplified to Chicken Parmesan (referring to the cheese made in and around the province of Parma). Interestingly, “Parmesan” is actually the French simplification of Parmigiana. The cheese became popular among the French in the 1500s.

Ingredients

  1. Preheat oven to 450 degrees F
  2. Place chicken breast halves between two resealable freezer bags or plastic on a solid, level surface. Firmly pound chicken with the smooth side of a flat or meat mallet to about 1/2 inch thickness.
  3. Beat eggs in a shallow bowl with a tablespoon of cold water, set aside.
  4. Mix bread crumbs and 1/2 cup Parmesan cheese in a separate bowl, set aside.
  5. Evenly coating both sides of the chicken with flour.
  6. Dip flour coated chicken breast in beaten eggs.
  7. Transfer chicken breast to breadcrumbs, pressing the crumbs into both sides. Repeat for each breast.
  8. Heat 1.5 cups of olive oil in a large skillet on medium-high heat until it begins to shimmer. Cook chicken until golden, about 2 minutes on each side.
  9. Put chicken on a baking pan and top each breast with about 1/3 cup of tomato sauce. Layer each chicken breast with equal amounts of mozzarella cheese and basil. Sprinkle 1 to 2 tablespoons of parmesan cheese on top of each breast.
  10. Bake in 450 degree oven until cheese is browned and bubbly, 15 to 20 minutes.
