Billy O’s Cream of Broccoli soup

Ingredients
- 7 tbsp butter
- 1.5 lbs fresh broccoli
- 1 whole onion chopped
- 1 whole carrot chopped
- 4 stalks celery chopped
- 2 tsp salt
- 2 tsp black pepper
- 3 tbsp flour
- 4 cups chicken broth
- 1.5 cups heavy cream

- cheddar cheese (optional)

Instructions
- Add 4 tablespoons of butter in a heavy-medium pot over medium-high heat. Add onion, celery, carrot, salt and pepper. Cook until onion is translucent.
- Add broccoli floretes and stalks. Add chicken broth and bring to boil. Simmer uncovered until broccoli is tender, about 15 minutes.
- Mix the flour and 3 tbsp of butter into a paste. Pour in cream. With an immersion blender, puree the soup. Add salt and pepper, to taste, and then replace the lid back on the pot. Serve hot.
