Billy O’s Tater Tachos (Tater Tot® Nachos)

I had been putting off making this recipe because to me potatoes don’t go along with Mexican food. This recipe taught me how wrong I was.
Cooking this recipe is as easy as cooking up some ground beef while the tater tots cooked in the oven and then topping it all with whatever you want (I used pico de gallo).
The whole family loved it and we can’t wait to make it again.
Ingredients
- 32 ounce tater tots
- lb ground beef
- ounce taco seasoning
- 2 cups shredded cheese Colby & Monterey Jack
- 1/2 cup onion diced for pico de gallo
- 1/2 cup tomato diced for pico de gallo
- 1/4 cup jalapeno diced for pico de gallo
- 2 tbsp cilantro diced for pico de gallo
Servings: people
Instructions
- Prepare tater tots according to package.
- Cook ground beef with a package of taco seasoning.
- When tater tots are done cooking, remove from oven (keep oven on) and top shredded cheese and ground beef.
- Pop back in the oven until cheese is melted.
- Remove from oven and top with pico de gallo and your favorite Mexican toppings.
