Bacon Wrapped Meatloaf

TOTAL TIME: Prep: 40 min. Bake: 1 hour + standing
MAKES: 6 servings

Ingredients

  • 2 large eggs, lightly beaten
  • 3/4 cup 2% milk
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 2 garlic cloves, minced
  • 2 teaspoon salt
  • 1 teaspoon pepper
  • 1-1/2 pounds ground beef
  • 1/2 cup packed brown sugar
  • 1 teaspoon Worcestershire sauce
  • 1/2 pound of bacon
  1. Preheat oven to 350°.
  2. In a large bowl, combine the ground beef, milt, eggs, onion, green pepper, garlic and salt/pepper.
  3. Mix thoroughly.
  4. Shape into an 9×5-in. loaf.
  5. On aluminum foil, arrange bacon slices, crosswise, overlapping them and tucking them under to prevent curling.
  6. Bake loaf in a shallow roasting pan until bacon is crisp and loaf registers 160 degrees, about 1 hour. Cool for at least 20 minutes. Slice and serve.

I mostly chose to smoke my bacon-wrapped meatloaf in my smoker for about 3 hours and it turned out even better.
