15 February, 2016 Billy O’s Cream of Broccoli soup Posted in : Soups and Stews on February 15, 2016 by : Bill Atkinson Tags: broccoli, soup Tweet Buffer Billy O's Cream of Broccoli soup Print Recipe CourseSoups Billy O's Cream of Broccoli soup Print Recipe CourseSoups Ingredients 7 tbsp butter 1.5 lbs fresh broccoli 1 whole onion chopped 1 whole carrot chopped 4 stalks celery chopped 2 tsp salt 2 tsp black pepper 3 tbsp flour 4 cups chicken broth 1.5 cups heavy cream Toppings croutons optional cheddar cheese (optional) Servings: Instructions Add 4 tablespoons of butter in a heavy-medium pot over medium-high heat. Add onion, celery, carrot, salt and pepper. Cook until onion is translucent. Add broccoli floretes and stalks. Add chicken broth and bring to boil. Simmer uncovered until broccoli is tender, about 15 minutes. Mix the flour and 3 tbsp of butter into a paste. Pour in cream. With an immersion blender, puree the soup.
